How this posting process work? Can a player forgo the last year of his contract if he is posted?

This is true. However, you seem to infer that the player has control over the timing of his posting. Not all teams will allow a player to be posted (like the Giants, as has been mentioned numerous times, who don't recognize the Posting System). If a team wants to capitalize on the bidding money for a player, then posting him in the last year before becoming a free agent will get the most out of that player. But this is by no means a guarantee, and if the team chose to, they may do so sooner.
