I apologize if these have been asked before:

1. How do I throw a change-up?

2. Do relievers need warm-up? If yes, how?

Change-up is a specialty pitch. It's down on the direction pad, but some guys have forks/splitters with a change-up, so you'll need to press R1 after selecting a downward breaking pitch.

No, pitchers don't need to warm up, but you should throw those practice pitches to get timing down.
